Pumpkin Chocolate Chip Bread


Pumpkin bread reminds me of Fall time.  This is a recipe that I found online and made a few "healthy" adjustments.  I like to make muffins out of the dough instead of bread.  Makes it's it easy for lunches at our house.  These muffins are mighty tasty. 

Ingredients

1 (15 ounce) can pumpkin puree
4 eggs
1/4 cup vegetable oil
1 C applesauce
2/3 cup apple juice
2 cups white sugar
3 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
3 T flax seed
Chocolate chips


Directions

1. Preheat oven to 350 degrees F (175 degrees C). Spray PAM on muffin tins or loaf bread pans.

2. In a large bowl, mix together pumpkin puree, eggs, oil, applesauce, apple juice and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger, flax seed. Stir the dry ingredients into the pumpkin mixture until just blended. Mix in chocolate chips.  Pour into the prepared pans.

3. Bake for about 13-16 minutes for muffins or 40-50 minutes in loaf pans in preheated oven. Loaves are done when toothpick inserted in center comes out clean.
