
This is an online recipe that is a yummy, mosit, chocolate cake. It's a tricky way to sneak some zucchini into your kids. Kids love the chocolate taste and parents like that kids are getting some veggies in their cake!
2 cups all-purpose flour
2 cups white sugar
3/4 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
4 eggs
1/2 C vegetable oil
1 C applesauce
3 cups grated zucchini
Directions
- Preheat oven to 350 degrees F (175 degrees C). Spray with pam a 9x13 inch baking pan.
- In a medium bowl, stir together the flour, sugar, cocoa, baking soda, baking powder, salt and cinnamon. Add the eggs, applesauce and oil, mix well. Fold in zucchini until evenly distributed. Pour into the prepared pan.
- Bake for 50 to 60 minutes in the preheated oven, until a knife inserted into the center comes out clean. Cool cake completely before frosting with your favorite frosting.
Homemade chocolate frosting:
3 C powered sugar
2/3 C baking cocoa
1/4 C milk
1/2 C butter (1 stick)
1 t vanilla
Blend sugar and cocoa together. Melt butter then add butter, milk and vanilla to sugar/cocoa mixture. Beat for a few minutes until well blended.
