Tuck's Famous Carrot Cake

I got this recipe from a co-worker.  He brought some of this cake into work and everyone asked for the recipe.  It's a yummy carrot cake and has a delicious cream cheese frosting!


Carrot Cake
4 eggs                                                                    2 C flour 
2 C sugar                                                               1 tsp salt
3 C grated carrots                                                  2 tsp cinnamon
1 1/2 C oil (I use 1 C applesause, 1/2 C oil)           2 tsp baking soda

Preheat oven to 375 degrees.   Spray 9x13 pan with cooking spray.  Beat eggs until lemon color and gradually add sugar.  Beat well.  Add carrots and applesauce and oil.  Beat well.  Add dry ingredients and blend well.  Bake at 375 degrees for 40 to 45 minutes or until cake tester comes out clean.

Cream Cheese frosting
8 oz cream cheese                          3 to 4 C powdered sugar
1/2 C butter                                    1 tsp vanilla

Cream cream cheese and butter until smooth.  Add vanilla  and beat well.  Add powdered sugar and beat well.  Frost the cooled cake.

Hint:  Refrigerate cake overnight for best flavor

  1. I am going to make this on Sunday...carrot cake is my FAVE and it was the biggest layer of our wedding cake.
