Coffee Cake

When I was little my mom would always make some coffee cake on Saturday mornings.  It's always a favorite in our home.

Ingredients:

1 1/2 C Flour                             1/4 C shortening
1/2 C sugar                                1 beaten egg
2 tsp baking powder                   1/2 C buttermilk
1/2 tsp salt                                  1/2 tsp baking soda

Sift dry ingredients, cut in shortening till coarse crumbs.  Blend egg, buttermilk.  Add to above mixture.  Stir until just moistened.  Put half mixture in 8x8 pan.

Combine:
1/2 C brown sugar                     2 tsp cinnamon
2 TBS flour                                2 TBS butter

Mix together and cut butter into the mixture.  Put in middle, then put the rest of the above mixture on top.  Bake 375 degrees for 20 minutes in a greased pan.

**Note: Our family always doubles the recipe and I put the mixture in a 9x13 pan.  It always seems to disappear quickly!
