Baked Potato Soup
1/4 C butter
1/4 C flour
1/2 t salt
1/2 t pepper
1 C chicken broth
2 C milk
2 C baked potato, scooped out
additional toppings I put in the soup are carrots, celery, bacon or ham or sausage and we can't forget about the sour cream and cheese on top!
Directions
1. In a stockpot, melt butter over medium-high heat. Whisk in flour and continue to cook, stirring constantly for about 2 minutes, add salt and pepper. Whisk in broth. Stir until smooth. Turn heat to medium.
2. Slowly add in milk, continue to whisk. Fold in cooked potato. Add bacon or ham. Cook until bubbly and smooth. Turn heat to simmer.
3. Serve. Topping to stir into soup is sour cream to taste or additional bacon or cheese.
** Add in toppings we have used are: sour cream, red peppers, cheese, bacon, ham.

LOVE soup in the fall and winter, we will have to try this one! Looks wonderful!
