These muffins are so scrumptious!  I got this recipe online at  https://damndelicious.net.  
I love the orange zest in these muffins and the glaze on top!  These muffins will be made again and again at our house!

Ingredients:

  • 1 3/4 cups all-purpose flour
  • 2/3 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup sour cream
  • 1 large egg
  • 1/2 cup freshly squeezed orange juice
  • Zest of 1 orange
Ingredients for the Orange Zest Glaze:

  • 2 1/4 cups confectioners’ sugar
  • 1/4 cup freshly squeezed orange juice
  • 2 teaspoons orange zest
Directions:

  1. Preheat oven to 400 degrees F. Grease 12-cup standard muffin tin; set aside.
  2. In a large bowl, combine flour, sugar, baking powder and salt.
  3. In a large glass measuring cup or another bowl, whisk together butter, sour cream, egg, orange juice and orange zest. Pour mixture over dry ingredients and stir using a rubber spatula just until moist.
  4. Scoop the batter evenly into the muffin tray. Place into oven and bake for 15-17 minutes, or until a tester inserted in the center comes out clean.
  5. To make the glaze, combine confectioners’ sugar, orange juice and orange zest. Whisk until smooth. If the glaze is too thin, add more confectioners’ sugar as needed.
  6. When the muffins are done, cool for 10 minutes and dip the muffin crown into the glaze.
  7. Allow glaze to set before serving.
