Ingredients:
3 medium carrots- peeled and sliced
2 medium potatoes, peeled and sliced
some celery chopped
1/4 C butter
1/4 C flour
2 C chicken broth
1/2 t thyme
1/2 t salt
1/2 t pepper
2 C cooked cubed chicken
1/2 C peas or corn, thawed
4 green onions sliced
1 pie pastry (double or single crust)
Instructions:
Cook carrots, potatoes, celery in water about 10 min, then drain.
Melt butter in pan. Stir in flour until well combined. Add chicken broth, thyme, salt and pepper, until sauce is creamy. Bring to a boil for 2 min until thickened. Set aside.
In a large bowl, stir together the drained carrots, celery, potatoes, white sauce, and all other ingredients.
Transfer mixture to a greased 2 quart pie dish and top with double pie pastry. cut slits in top and brush with milk.
Bake 375 for 45-60 min until top of crust is light brown.
