Quick Blueberry Muffins


This recipe comes from my friends recipe blog somethingbluekitchen.blogspot.com  I love getting new ideas and making new things.  These blueberry muffins were sure good!
1 egg

1 c milk
3 T vegetable oil
2 c flour
1 c sugar
2 ½ t baking powder
½ t salt
2 c fresh or frozen blueberries

In a large mixing bowl, beat the egg, milk and oil. Combine the flour, sugar, baking powder and salt; gradually add to egg mixture, beating just until combined. Fold in blueberries.

Pour the batter into a greased muffin tins and bake 350 degrees for 13-15 mintues.  Or if you would like a loaf of blueberry bread, pour into greased 9x5x3-inch loaf pan and bake at 350° for 50-55 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
