Sour Cream Potato Salad

When I was in YW we made a cookbook for a fundraiser.  This recipe was submitted by one of the ward members and it's a great side dish to add to an outdoor picnic in the summer time.
7 medium potatoes, peeled, diced, and cooked (about 6 cups)
1/3 C Good Seasons Italian dressing
1/4 C diced green onion and tops
1/2 C mayonnaise (I use Best Foods)
salt and celery seed to taste
3/4 C diced celery
4 hard boiled eggs
1/2 C sour cream
1/3 C diced, peeled cucumber
some bacon strips cooked and diced up

While potatoes are warm, pour dressing over potatoes and chill for 2 hours.  Add celery, onions, chopped eggs.  Mix in little mayo and sour cream into salad to suit your taste.  Mix cucumber and bacon just before serving.  Serves 8.  I also like to sprinkle some salad seasoning mix on my potato salad...yummy!
