Frog Eye Salad

This is the number one requested salad by my husband.  It's a favorite in our home and the kids love the colored marshmallows!

3/4 pkg Acini de Pepe macaroni
1/4 C Flour
1 3/4 C pineapple juice
2 T lemon juice
2 lrg cans pineapple tidbits, drained
3/4 C coconut. optional
3/4 C sugar
1/2 t salt
2 eggs, beaten
8 oz cool whip
2 cans mandarin oranges
1 pkg mini marshmallows, optional

Cook macaroni.  Mix and bring to boil the sugar, flour, salt and pineapple juice.  Boil until thick.  Add beaten eggs and lemon juice.  Mix in the macaroni and marinate overnight.  Add the remainder of the ingredients and serve.
